Can you imagine the world without bread? I know I can’t. Ever since my first bread dough failed in my Food Production Class at Ohio State University, I’ve thrown my life into learning about Bread. Among all the food systems I’ve studied, bread has been the most intriguing because it’s complex and non-reversible. I challenged myself to master it. After graduating from the Ohio State University in 1994, with a Bachelors of Science in Food Science and Nutrition, I headed over to the Grain Science Department at KSU. It is here that I focused my graduate curricula on baking, bread and grain product texture. I graduated from the Department of Grain Science with a Masters in 1998 and a Ph.D. in 2002. I’m a big supporter of commercial baking, and I have been in the American Society of Baking’s Board for seven years. I will be retiring from the Treasurer’s position this year.
I’m a mother of three boys, 6, 10 and 14. Spouse to a wonderful man for 18 years. I’m daughter to a successful entrepreneurial food broker in Singapore. Growing up in the family business, I had no idea that baking would be my life long career today.
With a passion for bread baking in 2003, I started up the Cosmopolitan Bread Cafe in Denver, Colorado. It was a novel bake-on-demand concept that offered freshly baked bread hot out of the oven. After three years, I closed the cafe and sold the patent rights to Cargill.
I started up the R&D program and baking lab at Wendy’s New Bakery Company in Ohio in 2007. As the R&D Manager, I loved the hands on, problem solving in a production atmosphere. In 2013, I moved to Portland, Oregon, to fill the position of Director of Technical Services at Dave’s Killer Bread. Here, I was in charge of placing food safety, quality and R&D procedures in place for their nationwide growth. In 2014, I left DKB and started work full time on BAKERpedia.
I felt the need to create a place where bakers can come to for up to date technical information. So far, this journey has been successful, with a push from my users to create a community for commercial bakers using social media. BAKERpedia.com is the culmination of my lifelong dream to improve food production worldwide through baking, and is home to The Commercial Baker’s Encyclopedia™.
